Vegetables
Leeks and carrots are braised and then finished by adding rice and lemon juice. Served warm or at room temperature, it is a healthy, light, and naturally vegan recipe.
Ingredients :
- 750 g leeks
- 3 carrots
- 6 tbsp olive oil
- 1.5 tbsp rice
- Juice of 1 lemon
- 300 ml boiling water
- 1/2 tsp salt
Preparation :
- Wash the leeks thoroughly and slice them diagonally or into rounds as desired.
- Wash, peel, and slice the carrots; place them in a pot and add the chopped leeks along with the olive oil.
- Cover the pot and let the vegetables sweat and cook gently in their own juices over medium heat for about 15 minutes.
- Pour 300 ml of boiling water into the pot.
- Add the rinsed rice, salt, and freshly squeezed lemon juice, then stir the mixture gently.
- Cover the pot and simmer on low heat for approximately 20 more minutes before turning off the heat.
- Serve the braised leeks at room temperature or warm.
