Vegetables

Leeks and carrots are braised and then finished by adding rice and lemon juice. Served warm or at room temperature, it is a healthy, light, and naturally vegan recipe.

Ingredients :

  • 750 g leeks
  • 3 carrots
  • 6 tbsp olive oil
  • 1.5 tbsp rice
  • Juice of 1 lemon
  • 300 ml boiling water
  • 1/2 tsp salt

Preparation :

  • Wash the leeks thoroughly and slice them diagonally or into rounds as desired.
  • Wash, peel, and slice the carrots; place them in a pot and add the chopped leeks along with the olive oil.
  • Cover the pot and let the vegetables sweat and cook gently in their own juices over medium heat for about 15 minutes.
  • Pour 300 ml of boiling water into the pot.
  • Add the rinsed rice, salt, and freshly squeezed lemon juice, then stir the mixture gently.
  • Cover the pot and simmer on low heat for approximately 20 more minutes before turning off the heat.
  • Serve the braised leeks at room temperature or warm.
