Ingredients :

  • 500 g fresh okra (small variety preferred)
  • 1 large onion
  • 1.5 medium tomatoes
  • 1/3 cup olive oil
  • 1.5 tsp sweet paprika
  • 1 tsp salt
  • 2.5 cups hot water
  • Juice of half a lemon

Preparation :

  • Wash the okra thoroughly and drain. Carefully trim the caps in a conical shape (like sharpening a pencil) to avoid exposing the seeds. This prevents the okra from becoming slimy.
  • Finely chop the onion and dice the tomatoes into small cubes.
  • In a pot, heat the olive oil and sauté the chopped onions over low heat until they are soft and translucent.
  • Add the diced tomatoes and cook for a few minutes until they soften.
  • Place the trimmed okra into the pot. Sprinkle with salt, paprika, and sugar.
  • Pour in the hot water and the lemon juice immediately (the lemon helps keep the texture firm).
  • Cover the pot and simmer on low heat for about 60 minutes without stirring, or until the okra is tender.
  • Remove from heat and let it cool in the pot.
