Vegetables
Ingredients :
- 500 g fresh okra (small variety preferred)
- 1 large onion
- 1.5 medium tomatoes
- 1/3 cup olive oil
- 1.5 tsp sweet paprika
- 1 tsp salt
- 2.5 cups hot water
- Juice of half a lemon
Preparation :
- Wash the okra thoroughly and drain. Carefully trim the caps in a conical shape (like sharpening a pencil) to avoid exposing the seeds. This prevents the okra from becoming slimy.
- Finely chop the onion and dice the tomatoes into small cubes.
- In a pot, heat the olive oil and sauté the chopped onions over low heat until they are soft and translucent.
- Add the diced tomatoes and cook for a few minutes until they soften.
- Place the trimmed okra into the pot. Sprinkle with salt, paprika, and sugar.
- Pour in the hot water and the lemon juice immediately (the lemon helps keep the texture firm).
- Cover the pot and simmer on low heat for about 60 minutes without stirring, or until the okra is tender.
- Remove from heat and let it cool in the pot.
