Looking for a delicious way to eat more greens? Meet Fresh Cowpeas in Olive Oil. Unlike green beans, cowpeas have a distinct flavor that pairs with tomato and onion sauce. Cooked slowly, this vegan and gluten-free dish is an healthy option for meals.
Ingredients :
- 700 g fresh cowpeas (green beans/long beans)
- 1 large onion
- 3 tbsp tomato paste (or 2 medium tomatoes, peeled and diced)
- 1 large garlic clove
- 1 tsp sweet paprika
- 1 tsp salt
- 1/3 cup olive oil
- 2.5 cups hot water
Preparation :
- Wash the cowpeas thoroughly, remove the strings/ends, and cut them into halves or thirds.
- Finely chop the onion and mince the garlic.
- Place the chopped onions at the bottom of a pot.
- Add the cowpeas over the onions, then drizzle with the olive oil.
- Top with the diced tomatoes (or tomato paste), minced garlic, salt, and paprika. Do not stir yet.
- Cover the pot and cook over low heat for about 10-15 minutes to let the vegetables release their juices.
- Once the liquid reduces, pour in the hot water.
- Continue cooking on low heat until the cowpeas are tender and have changed color (approx. 30-35 mins).
- Remove from heat and let it cool slightly before serving.
