This zucchini recipe takes the classic zucchini dish and makes it a healthy option. It has a Mediterranean flavor without the heavy oil. Drenched in garlic-tomato sauce and finished with yogurt, it is a healthy food option.

Ingredients :

  • 6 medium zucchinis
  • 1 medium onion
  • 3 tbsp tomato paste (or 2 medium tomatoes, diced)
  • 2 garlic cloves
  • 2 tsp sweet paprika
  • 1/4 cup olive oil

Preparation :

  • Finely chop the onion into small pieces.
  • Dice the zucchinis into small cubes.
  • Mince or crush the garlic cloves.
  • Place the chopped onions in a pot, followed by the olive oil and zucchini cubes.
  • Add the tomato paste, salt, paprika, and garlic on top of the vegetables.
  • Cover the pot and cook over low heat.
  • Allow the onions to soften before stirring; then, mix everything gently.
  • Simmer until the zucchinis are tender, then remove from heat.
  • Serve warm, topped with garlic yogurt.
