This zucchini recipe takes the classic zucchini dish and makes it a healthy option. It has a Mediterranean flavor without the heavy oil. Drenched in garlic-tomato sauce and finished with yogurt, it is a healthy food option.
Ingredients :
- 6 medium zucchinis
- 1 medium onion
- 3 tbsp tomato paste (or 2 medium tomatoes, diced)
- 2 garlic cloves
- 2 tsp sweet paprika
- 1/4 cup olive oil
Preparation :
- Finely chop the onion into small pieces.
- Dice the zucchinis into small cubes.
- Mince or crush the garlic cloves.
- Place the chopped onions in a pot, followed by the olive oil and zucchini cubes.
- Add the tomato paste, salt, paprika, and garlic on top of the vegetables.
- Cover the pot and cook over low heat.
- Allow the onions to soften before stirring; then, mix everything gently.
- Simmer until the zucchinis are tender, then remove from heat.
- Serve warm, topped with garlic yogurt.
