Rice
Rice is combined with boiled chickpeas, butter and beef broth. It is a perfect side-dish for stews and sautéed meats.
Ingredients :
- 1 cup rice
- 2 cups hot water (half can be beef broth)
- 2 tbsp vegetable oil
- 1 tsp butter
- 1/4 cup orzo (şehriye)
- 1/2 cup boiled chickpeas
- 1/2 tsp salt
Preparation :
- Rinse the rice thoroughly in cold water until the water runs clear, then drain well.
- Heat the vegetable oil in a shallow pot, add the orzo, and sauté until it turns golden brown.
- Add the washed rice to the pot and continue to sauté until the grains become translucent and well-coated with oil.
- Pour in the hot water (and beef broth if using), then add the butter, boiled chickpeas, and salt.
- Cover the pot tightly and reduce the heat to the lowest setting; simmer until the rice has absorbed all the liquid.
- Once cooked, turn off the heat, and let the pilaf rest (infuse) for about 15 minutes before serving.
