Rice

Rice is combined with boiled chickpeas, butter and beef broth. It is a perfect side-dish for stews and sautéed meats.

Ingredients :

  • 1 cup rice
  • 2 cups hot water (half can be beef broth)
  • 2 tbsp vegetable oil
  • 1 tsp butter
  • 1/4 cup orzo (şehriye)
  • 1/2 cup boiled chickpeas
  • 1/2 tsp salt

Preparation :

  • Rinse the rice thoroughly in cold water until the water runs clear, then drain well.
  • Heat the vegetable oil in a shallow pot, add the orzo, and sauté until it turns golden brown.
  • Add the washed rice to the pot and continue to sauté until the grains become translucent and well-coated with oil.
  • Pour in the hot water (and beef broth if using), then add the butter, boiled chickpeas, and salt.
  • Cover the pot tightly and reduce the heat to the lowest setting; simmer until the rice has absorbed all the liquid.
  • Once cooked, turn off the heat, and let the pilaf rest (infuse) for about 15 minutes before serving.
