Soups
Orzo soup features toasted orzo (şehriye) combined with chickpeas and tomato sauce. Whether made with beef broth or sautéed ground beef, its blend of dried mint and garlic makes it a tasty and healthy starter.
Ingredients :
- 1 cup orzo (şehriye)
- 3 tbsp olive oil
- 300 ml beef broth (or 100g sautéed ground beef)
- 1 large clove of garlic
- 5 tbsp tomato sauce
- 1/2 tbsp sweet red pepper powder
- 1 liter boiling water
- 1 tsp salt
- 1 tsp dried mint
- 1/2 tsp black pepper
- 2/3 cup boiled chickpeas
Preparation :
- Heat the olive oil in a pot. Add the orzo and garlic, sautéing them together until the orzo is lightly toasted.
- Add the tomato sauce over the toasted orzo and cook for a few minutes.
- Pour in the sweet red pepper powder, boiling water, and the beef broth (or add the sautéed ground beef).
- Add the salt, dried mint, black pepper, and the pre-boiled chickpeas, then leave the soup to simmer.
- Once the orzo is tender and the soup has thickened (approximately 30 minutes later), turn off the heat.
- Serve hot, perhaps with a squeeze of lemon if desired.
