Pasta
A Mediterranean pasta recipe that features pasta tossed in a sauce made from grated tomatoes, sautéed green peppers, and aromatic garlic. By adding a splash of the pasta's cooking water, the sauce becomes softer.
Ingredients :
- 1/2 package of pasta
- 3 grated tomatoes
- 1 green peppers
- 2 cloves of garlic
- 3 tbsp olive oil
- 1/3 tsp salt
- 1/4 tsp black pepper
Preparation :
- Wash the green peppers and chop them into tiny pieces.
- Peel and finely mince the garlic, then place them in a pan with the peppers and 4 tablespoons of olive oil to sauté gently.
- Add the pre-grated tomatoes to the sautéed peppers and cook until the sauce reduces and thickens.
- Meanwhile, boil the pasta in plenty of salted water according to the package instructions, then drain.
- Reserve half a ladle of the pasta cooking water and stir it into the tomato sauce to help bind the texture.
- Add the drained pasta to the sauce and toss well for a few minutes to allow the flavors to integrate.
- Serve immediately while hot.
