Starters & Mezes
A classic meze that is both creamy and vibrant. This dish features grated carrots sautéed in olive oil to bring out their natural sweetness, which are then folded into a thick, garlicky yogurt base. It pairs wonderfully with grilled meats or fresh bread.
Ingredients :
- 3 large carrots
- 3 tbsp olive oil
- 2 cloves of garlic
- 4 tbsp strained (Greek-style) yogurt
- 1/3 tsp salt
Preparation :
- Wash and peel the carrots, then grate them using the coarse side of a grater.
- Heat the olive oil in a pan, add the grated carrots, and sauté for about 3-4 minutes until they are soft and tender.
- Remove the carrots from the heat and set them aside to cool to room temperature.
- In a separate bowl, crush the garlic cloves and whisk them together with the strained yogurt and salt until smooth.
- Add the cooled carrots to the yogurt mixture and stir well until all the ingredients are perfectly combined.
- Transfer the mixture to a serving plate. You may garnish with walnuts if desired.
