A timeless classic, rice pudding is a creamy and healthy dessert that captures the perfect balance of milk, sugar, and rice. By lightly rinsing the rice to preserve its natural starch, we achieve a thick and velvety consistency without the need for additional thickeners. Served chilled and often finished with a sprinkle of cinnamon, it is the ultimate soul-soothing dessert.
Ingredients :
- 2 tea glasses of rice
- 3 cups water
- 1250 ml (approx. 5.5 cups) milk
- 1 cup granulated sugar
- 1 packet vanilla powder (optional)
Preparation :
- Lightly rinse the rice, leaving some of the starch behind to help thicken the pudding naturally.
- Place the rice and 3 cups of water in a pot; boil until the rice is tender and has absorbed most of the water.
- Add the milk to the pot and stir occasionally until it comes to a boil again.
- Once boiling, lower the heat and simmer, stirring from time to time, until the pudding thickens to a creamy consistency.
- Add the granulated sugar and the vanilla powder (if using) once the desired thickness is reached.
- Cook for a few more minutes to allow the sugar to fully dissolve and integrate into the pudding.
- Pour the rice pudding into individual bowls, let them cool to room temperature, and then refrigerate before serving.
- You may serve the rice pudding with a sprinkle of ground cinnamon on top.
