A highly nutritious breakfast dish that combines fresh baby spinach with eggs. Seasoned with sweet red paprika, this sautéed spinach dish is a healthy, energy-boosting start to your day. It is simple to prepare and pairs beautifully with a slice of toasted whole-grain bread.

Ingredients :

  • 10 sprigs of fresh spinach
  • 2 eggs
  • 1/4 tsp salt
  • 1/3 tsp sweet red paprika powder
  • 2 tbsp olive oil

Preparation :

  • Thoroughly wash the spinach leaves and chop them finely into thin strips.
  • In a small bowl, combine the eggs, salt, and sweet red paprika, then whisk them together until well blended.
  • Heat the olive oil in a frying pan over medium heat; add the chopped spinach and sauté until cooked.
  • Once the spinach has wilted and its color has deepened, pour the whisked egg mixture evenly over the top.
  • Stir gently to combine the ingredients and continue cooking over low heat until the eggs are cooked.
