A Turkish breakfast staple that perfectly balances simplicity and flavor. This one-pan dish features tomatoes and mild green peppers sautéed until tender, then combined with lightly scrambled eggs. Whether cooked with butter or olive oil, it is best enjoyed warm, served directly in the pan with plenty of crusty bread for dipping.

Ingredients :

  • 2 medium tomatoes
  • 2 eggs
  • 3 green peppers
  • 2 tbsp olive oil or 1 tbsp butter
  • 1/4 tsp salt

Preparation :

  • Thoroughly wash the tomatoes and green peppers, then dice them into small pieces.
  • Add the olive oil or butter to a frying pan; once heated, add the peppers and sauté until they soften and slightly change color.
  • Add the diced tomatoes to the pan, cover with a lid, and simmer over low heat until the tomatoes are fully cooked and juicy.
  • Once the tomatoes are tender, crack the eggs into the pan and sprinkle in the salt.
  • Stir gently to combine the eggs with the vegetable mixture and continue cooking until the eggs reach your desired consistency.
  • Serve your hot menemen warm.
