Presentation meets flavor in this classic Turkish pastry. Named 'Gül Böreği' (Rose Borek) after its beautiful spiral shape, these Cheese Rose Boreks are as fun to make as they are to eat. Unlike tray boreks that need slicing, these are rolled into individual, single-serving portions, making them perfect for parties or lunchboxes. We brush fresh Yufka sheets with a milk and oil wash to keep the layers tender, then coil them around a savory feta and herb filling. No knife required—just grab one and enjoy!
Ingredients :
- 6 sheets of Turkish Yufka (fresh round phyllo sheets)
- FOR THE SAUCE:
- 3/4 cup milk (approx. 150ml)
- 3/4 cup vegetable oil (approx. 150ml)
- 1 whole egg
- 1 egg white (reserve the yolk for topping)
- FOR THE FILLING:
- 1 bowl crumbled Feta cheese (approx. 250g)
- 1/4 bunch fresh parsley and dill, finely chopped
- TOPPING:
- 1 egg yolk
- Nigella seeds or sesame seeds
Preparation :
- Prepare the filling: In a bowl, mix the crumbled Feta cheese with finely chopped parsley and dill. Set aside.
- Prepare the sauce: In a large mixing bowl, whisk together the milk, vegetable oil, 1 whole egg, and the extra egg white until smooth.
- Lay one sheet of Yufka flat on the counter.
- Spoon 5-6 tablespoons of the sauce. To distribute it evenly without a brush, fold the edges of the yufka inward towards the center and then open it back up. This coats the entire sheet.
- Cut the round sheet into 4 equal triangles (quarters), like slicing a pizza.
- Place a generous spoonful of the cheese filling on the wide, curved edge of each triangle.
- Roll the triangle from the wide end towards the tip to form a long log (cylinder).
- Coil the log around itself (like a snail shell) to create a rose shape.
- Repeat this process with all remaining Yufka sheets (you will get 24 pieces in total).
- Arrange the rose boreks on the baking tray.
- Preheat your oven to 180°C (350°F) and line a baking tray with parchment paper.
- Brush the tops with the reserved egg yolk and sprinkle with nigella seeds or sesame seeds.
- Bake for about 25-30 minutes until they are golden brown and crispy.
- Serve warm or at room temperature.
