Appetizers
Ingredients :
- 1 cup red lentils
- 1.5 cups fine bulgur
- 1 medium onion
- 1 bunch parsley
- 1 bunch spring onions
- 5 tbsp olive oil
- 1 tbsp tomato paste
- 1 tbsp pepper paste
- 3 cups cold water
- 1 tsp salt
- 1 tsp black pepper
- 1 tsp cumin
- 1 tsp sweet red paprika
Preparation :
- Wash and finely chop parsley and spring onions.
- Wash lentils, put in a pot, and add water.
- Cook lentils with lid on for 15 minutes until soft and water is absorbed.
- Turn off the heat, add bulgur, mix, and cover. Let bulgur sit in lentils for 30 minutes to soften. Add a little hot water if too dry.
- In a pan, heat olive oil. Chop onion into small cubes and sauté on low for 10 minutes.
- Add tomato and pepper paste to onions and cook for 7-8 minutes on low heat.
- Mix cooked paste and onion with lentil-bulgur mixture, add salt, pepper, cumin, and paprika.
- Let the mixture cool slightly, then form small balls and place on a plate.
