Vegetable Dishes
Ingredients :
- 5 potatoes
- 3 large zucchinis
- 500 g green peppers
- 4 eggplants
- 3 tomatoes
- 2 garlic cloves
- 1 tsp vinegar
- 1 tsp sugar
Preparation :
- Wash, peel, and cube eggplants. Soak in salted water for 30 min.
- Wash, peel, and slice potatoes. Toss with oil and salt, bake at 220°C for 40 min.
- Wash, peel, and cube zucchinis. Bake with eggplants at 220°C for 35 min.
- Wash and halve peppers, bake at 220°C for 20 min.
- Dice tomatoes and place in a small pot. Chop garlic and add to tomatoes.
- Cook covered on low heat for 30 min.
- Add vinegar and sugar, mix and turn off heat.
- Pour tomato sauce over baked vegetables. Serve with yogurt.
