Vegetable Dishes

Ingredients :

  • 5 potatoes
  • 3 large zucchinis
  • 500 g green peppers
  • 4 eggplants
  • 3 tomatoes
  • 2 garlic cloves
  • 1 tsp vinegar
  • 1 tsp sugar

Preparation :

  • Wash, peel, and cube eggplants. Soak in salted water for 30 min.
  • Wash, peel, and slice potatoes. Toss with oil and salt, bake at 220°C for 40 min.
  • Wash, peel, and cube zucchinis. Bake with eggplants at 220°C for 35 min.
  • Wash and halve peppers, bake at 220°C for 20 min.
  • Dice tomatoes and place in a small pot. Chop garlic and add to tomatoes.
  • Cook covered on low heat for 30 min.
  • Add vinegar and sugar, mix and turn off heat.
  • Pour tomato sauce over baked vegetables. Serve with yogurt.
