Vegetable Dishes
Ingredients :
- 700 g fresh cowpeas
- 1 large onion
- 3 tbsp tomato paste or 2 medium (250 g) tomatoes
- 1 large garlic clove
- 1 tsp sweet paprika
- 1 level tsp salt
- Half a tea glass (90 g) olive oil
- 2.5 cups hot water
Preparation :
- Wash the cowpeas, remove strings, and cut in halves or thirds.
- Chop the onion into small pieces.
- Dice the tomatoes.
- Finely chop the garlic.
- Add onion to the pot, then olive oil and cowpeas.
- Add tomatoes, salt, paprika, and garlic on top.
- Cover and cook on low heat, adding hot water once it starts to dry.
- When cowpeas are tender and slightly golden, turn off the heat.
