Vegetable Dishes

Ingredients :

  • 700 g fresh cowpeas
  • 1 large onion
  • 3 tbsp tomato paste or 2 medium (250 g) tomatoes
  • 1 large garlic clove
  • 1 tsp sweet paprika
  • 1 level tsp salt
  • Half a tea glass (90 g) olive oil
  • 2.5 cups hot water

Preparation :

  • Wash the cowpeas, remove strings, and cut in halves or thirds.
  • Chop the onion into small pieces.
  • Dice the tomatoes.
  • Finely chop the garlic.
  • Add onion to the pot, then olive oil and cowpeas.
  • Add tomatoes, salt, paprika, and garlic on top.
  • Cover and cook on low heat, adding hot water once it starts to dry.
  • When cowpeas are tender and slightly golden, turn off the heat.
