Stuffed Vegetables
Ingredients :
- 15-16 medium-sized bell peppers for stuffing
- 2 large onions
- 1 cup rice (or a mix of rice and bulgur)
- 200 grams ground meat
- 1/2 small tea glass olive oil
- 2 tsp black pepper
- 1.5 tsp salt
- 2 medium tomatoes
- 1.5 tsp sweet paprika
- 1/2 bunch parsley
- 1 tbsp dried mint
- 1 tsp tomato paste
- For the sauce:
- 1 tbsp olive oil
- 1.5 cups water
- 1/2 tsp tomato or pepper paste
- 1/2 tsp dried mint
Preparation :
- Remove the stems from the peppers and wash them.
- Chop the onions finely. Wash the rice and drain.
- Wash the tomatoes, reserve the tops to cover the peppers, and chop the rest. Wash and chop the parsley.
- In a large bowl, combine the chopped onions, rice, ground meat, olive oil, black pepper, salt, chopped tomatoes, sweet paprika, parsley, dried mint, and tomato paste. Mix well.
- Stuff the peppers with the mixture and cover with the reserved tomato tops.
- Arrange the stuffed peppers in a pot. For the sauce, mix olive oil, water, tomato/pepper paste, and dried mint, and pour gently around the peppers without covering them completely.
- Cover the pot with a lid. Cook over medium heat until it starts boiling, then reduce to low heat and cook for 20 minutes until peppers are tender.
