Stuffed Vegetables

Ingredients :

  • 15-16 medium-sized bell peppers for stuffing
  • 2 large onions
  • 1 cup rice (or a mix of rice and bulgur)
  • 200 grams ground meat
  • 1/2 small tea glass olive oil
  • 2 tsp black pepper
  • 1.5 tsp salt
  • 2 medium tomatoes
  • 1.5 tsp sweet paprika
  • 1/2 bunch parsley
  • 1 tbsp dried mint
  • 1 tsp tomato paste
  • For the sauce:
  • 1 tbsp olive oil
  • 1.5 cups water
  • 1/2 tsp tomato or pepper paste
  • 1/2 tsp dried mint

Preparation :

  • Remove the stems from the peppers and wash them.
  • Chop the onions finely. Wash the rice and drain.
  • Wash the tomatoes, reserve the tops to cover the peppers, and chop the rest. Wash and chop the parsley.
  • In a large bowl, combine the chopped onions, rice, ground meat, olive oil, black pepper, salt, chopped tomatoes, sweet paprika, parsley, dried mint, and tomato paste. Mix well.
  • Stuff the peppers with the mixture and cover with the reserved tomato tops.
  • Arrange the stuffed peppers in a pot. For the sauce, mix olive oil, water, tomato/pepper paste, and dried mint, and pour gently around the peppers without covering them completely.
  • Cover the pot with a lid. Cook over medium heat until it starts boiling, then reduce to low heat and cook for 20 minutes until peppers are tender.
